Peach cobbler is comfort food. Plain and simple. There’s nothing plain about this one, and everything simple!
Your prep time is low so you can whip this up fast when you’re hankering for a healthy treat!

For the Peach Layer:

NOTE for unripe, hard peaches: to make them soft, slice peaches and place in a saucepan with about 1 cup of water. Simmer until soft (about 12-15 minutes), drain and continue on with directions.
Directions for ripe peaches
Preheat oven to 350 F.
After cutting peaches, put in bowl, pour monkfruit and cinnamon on top and mix until well-combined.
Pour peach mixture in prepared skillet and spread evenly.
Place cashews in food processor and combine until no longer coarse. Do not over process or it will turn into cashew butter. Be sure the total measurement is 1 cup after processing and process more if necessary.
Combine monkfruit to cashew flour and pour evenly over peaches.
Bake for 20-25 minutes or until golden brown.
Serve with dairy free vanilla Halo Top ice cream!
